Palomino Restaurant

On any given day, you can walk into Palomino Restaurant in Evans and see a familiar face, whether it’s a regular customer or one of the friendly staff you’ve gotten to know. This atmosphere is what Blake Lucio, regional manager of Lucio Concepts, wants customers to experience in his restaurant.

Specializing in fresh, made-from-scratch Mexican cuisine, Palomino has been a staple in Evans since 2004. This warm, welcoming dining space features art curated by the Lucio family, including the signature palomino on the wall of the front entrance.

Richard and Brenda Lucio, Blake’s parents, are the founders of what is now an eight-restaurant portfolio, which includes Palomino, Coyote’s Southwestern Grill, Blue Agave and Vatos Tacos and Tequila. But the Lucio family – for as far back as four generations – are a dynasty of entrepreneurs in the Mexican and southwestern cuisine space.

Richard’s father – Blake’s grandfather – Joseph Lucio, started The Armadillo in La Salle in 1971. Before that, Blake’s great-grandmother was one of the head cooks for Pancho Villa for many years. There, she developed her green chili recipe, which the family still uses in its restaurants to this day.

Upon visiting the restaurant, Lucio introduced the front-of-house, kitchen and wait staff with obvious pride. Many employees have been a part of the Lucio restaurant family for many years. In particular, Carlos Hernandez, who runs the kitchen at Palomino Evans, has been with the company for twenty years. In watching the staff prepare food, tend to the kitchen, serve customers and interact with each other, it’s clear that employees are proud of their work and enjoy what they do.

The Lucio family is especially proud of the environment at Palomino Evans: “The best thing about being in Evans is the people that frequent our restaurant. They have been supporting us for 19 years and we have come to know so many of them.  We love it when we see them 2 or 3 times a week, they all feel like family,” says Brenda Lucio.
